Stuffed Chicken Breasts

Ingredients
- 4 chicken breasts
- 4 oz. Palmetto Cheese Whipped, any variety
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp thyme, dried
- 1 oz. olive oil
Instructions
- Preheat oven to 375ºF.
- Scoop out Palmetto Cheese Whipped into 1 ounce portions on a small plate.
- On a cutting board, with a sharp knife, cut each chicken breast 3/4 of the way in half horizontally (butterfly) OR pound out flat with a meat mallet if you prefer.
- In a small cup, combine salt, pepper and thyme and mix up.
- Season a chicken breast with your mixture.
- On one end of the chicken, place a portion of Palmetto Cheese Whipped.
- Roll up the chicken breast and make sure the cheese is sealed inside.
- Season the other side of the chicken and continue doing this with the remaining.
- In a pan drizzled with olive oil, place the chicken breasts with seam side down and bake at 375ºF until they reach an internal temperature of 165ºF.
- Approximately 25-35 minutes depending on the size of your chicken.
